You will effectively manage the kitchen team to achieve the highest standard of food production for the Stadium, while meeting customer expectations, health and safety requirements and financial targets.

Key Responsibilities:

  • To be responsible for the day to day management of the kitchen operations to ensure they run efficiently;
  • Work with the Bar & Catering manager to monitor, review and refresh the food menus at the Stadium in order to provide all customers with exciting and appetising choices;
  • Deliver high quality restaurant meals and fast food whilst keeping in line with the agreed budget;
  • Keep abreast of trends and developments in the industry to be able to contribute to business development, e.g. planning new promotions and initiatives;
  • Record and maintain accurate data for all stock items and coordinate all stock deliveries;
  • Ensure allergen legislation is adhered to and all allergen ingredients information is recorded appropriately;
  • Ensure cleaning rotas are operational throughout the food production and service areas;
  • Resolve any customer issues with the Bar & Catering Manager;
  • Ensure that all relevant control procedures are in place to deliver effective stock and wastage records and management;
  • Manage direct reports and provide coaching, objectives and goal setting, performance management and other people policies as required from time to time; ensure they are motivated, productive and fully compliant with all regulations, legislation and team values and behaviours;
  • To have overall responsibility for the recruitment, induction, training, development and management of all kitchen staff;
  • Implement all catering activity within budgeted expenditure.

Health & Safety and Compliance Responsibilities:

  • To be responsible for ensuring that all kitchen staff are aware of the Work Instruction Notices that are associated with their role and ensure that they have adequate training in those areas;
  • Ensure that all equipment in the kitchen area is working safely and used following manufacturer’s guidelines for operation, reporting any concerns to the Bar & Catering Manager.
  • To keep up to date with and implement food hygiene regulations;
  • Be a qualified fire warden and/or first aider on behalf of the organisation.

Qualifications and Training Requirements:

  • Qualifications in food hygiene & Catering, for example BTEC HND in professional cookery or equivalent
  • “A” Level or similar vocational standard

Specialist Skills and Experience:

  • Minimum 5 years’ experience in a similar role in a high volume catering environment
  • Excellent cooking skills and the ability to write menus that are both creative and profitable
  • Previous experience of team management is essential
